Green Tomato Chutney (Habanero)

This is another take on green tomato chutney and it is actually green. The inspiration for this chutney was the weather because there was a frost warning so the tomato plants had to be cleared leaving lots of green tomatoes along with the autumn windfall apples. Green tomatoes and apples are the base for a classic green tomato chutney but I just had to use the super hot peach habanero chillis to give it a different kick. Habanero chillis have a pronounced fruity flavour and add a very distinctive flavour and aroma. Their flavour is so powerful there is no need for any other spices or flavours. The result is fresh, fruity, hot and really delicious.

 *800g green tomatoes
*400g white onions, peeled
*400g green apples, cored
*1/2 pineapple (optional)
*2 tsp salt
*400 ml cider vinegar
*340g sugar
*3-5 habanero chillis

Finely chop the white onions, apples, green tomatoes put into a large pot or jam pan and set over a medium heat. Add the salt, vinegar and sugar bring to the boil and cook for 35 minutes or so, add the chillis and pineapple, if using, and cook for a further 20-40 minutes or until the chutney is thick and has a glaze to it. Spoon into warm sterilised jars and seal immediately.
