Sweet Pear Chutney

I really love sweet mango chutney with a hot curry but as we can’t grow mangoes here I thought I would try and make something similar using what we do have, which is pears. The resulting chutney is excellent and not a bad substitute for Sweet Mango Chutney.

Makes 3kg/7lb Prep 20min Cook 60mins
*1.75kg/4lb ripe pears peeled, cored and finely chopped
*450g/1lb onions finely chopped
*grated zest of 2 lemons or oranges
*4 cloves garlic, crushed
*8cm piece of root ginger, peeled & grated
*1 tbsp mustard seeds
*1 tbsp onion seeds
*1 tbsp ground coriander
*2 tsp ground cinnamon
*12 cloves
*12 black peppercorns
*1 tsp crushed dried cayenne chilli
*900ml/11/2pints white wine vinegar
*1 tbsp salt
*900g/2lb light muscavado sugar.

Place all the ingredients, except the salt & sugar in a non corrosive jam pan. Stir well then bring to the boil cook uncovered until pulpy, about 20mins. Stir in salt and sugar and cook for about 40mins until the chutney is thick. Pour into warm sterilized jars and seal. Store in a cool dark place for at least 1 month before using.
