Courgette Blackbean Stirfry

This is a tasty vegetarian stir fry of courgettes with a salted soy bean, (also known as black beans) and garlic sauce. This version pictured uses green and yellow courgettes.

Serves 4 Prep 15min Cook 5-7mins

  • 1 tbsp dried salted soy beans (or black beans)
  • 4 cloves garlic
  • 1 tbsp soy sauce
  • 3 tbsp hot water
  • 1 tbsp vegetable oil
  • 1 tsp sesame oil
  • 1 onion, sliced
  • 2 cloves garlic, sliced
  • 1 green chilli, thinly sliced
  • 2 small yellow courgettes, sliced
  • 2 small green courgettes, sliced
  • handful of seasonal vegetables such as field mushrooms or green beans (optional)
  • handful garlic chives or coriander leaf, chopped (optional)

Rinse the dry black beans to remove excess salt and put into a mortar. Add the next four ingredients and bash into a rough sauce. Prepare the vegetables and set aside ready to use. Heat a large frying pan or work until very hot add the oils and throw in the onions, add the garlic and chilli, stir for a second then add the courgettes, stir fry over a very high heat for a minute then add the other vegetables, (if using) stir fry for a couple of minutes then add the sauce. Cook until you are happy with the consistency, i like my vegetables only just cooked i just cook it until the sauce bubbles and thickens a little. Throw in the chives stir and serve with rice or noodles.

Variations you could add any all kinds of veg including; snap peas, mangetout peas, asparagus, yard long beans or peppers.
Cooks Note Blackbeans are salted and fermented soya beans. I buy them when I have access to an Asian grocers so that I can make my own black bean sauce. I buy them in dry form and the preserved beans last for years.
